Romesco is a classic Spanish sauce made with almonds, garlic, peppers, and any number of other ingredients. It is easy to make, stores well, goes with a wide variety of items, and is surprisingly good for you. We had some good friends over for a St. Patrick’s Day dinner. There was no green beer, but we did have plenty of Irish-themed menu items and more than enough Guinness.

Agrodolce – essentially Italian sweet and sour sauce – is made by reducing balsamic vinegar and sugar (or, in this case, honey). You don’t have to brine the pork chops for this recipe to work, but you’ll be glad if you do. Continue reading ‘Pork Chops Agrodolce’
