We had some good friends over for a St. Patrick’s Day dinner. There was no green beer, but we did have plenty of Irish-themed menu items and more than enough Guinness.

Irish Beef Stew

Okay, okay, I know that authentic Irish stew is supposed to be made from mutton or lamb, but everyone in my family prefers beef. This may not be authentic, but it is delicious. I say below that it can be refrigerated for two or three days, but I should probably say that it *should* be. This is a dish that improves significantly in the fridge, and is much better on the second day.

I saw this on Michael Ruhlman’s blog on St. Patrick’s Day, and it made me wish I had time to make it that same day. Instead, I decided to wait until my (Irish) in-laws came to town for a visit. I actually made two briskets – wrapped separately – and left the second one in about an hour longer than the first. One 9 x 5 loaf
Recipe courtesy of my mother-in-law
- 2.5 cups wheat flour
- 1.5 cups white flour
- ½ teaspoon salt
- 1 heaping teaspoon baking soda
- ½ stick room temperature butter
- 2 cups buttermilk
- 1 Tablespoon sugar
Preheat oven to 425 degrees. Sift together the dry ingredients. Rub in butter until the mixture is the consistency of coarse crumbs. (A food processor makes this step much faster and easier, but it using one also means you have to clean it up when you’re done.) Continue reading ‘Irish Brown Bread’
