This is one of those recipes where some kind of voodoo happens that makes the result way better than you’d imagine it would be. My friend Virginia Fox makes these occasionally for parties, and I always find myself camped-out by the bowl. There are only 5 ingredients and it takes about 11 minutes total (including 10 minutes in the oven) to make, but they’re outstanding.

- 1.5 Tb Olive Oil
- 1 Tb dried rosemary
- 1 tsp salt
- ½ tsp cayenne
- 2 cups walnuts
Mix the oil, rosemary, salt, and cayenne in a small bowl. Add the walnuts and toss to coat. Spread in a single layer on a baking sheet and roast for 10 minutes at 350 degrees. Cool and serve at room temperature.
OMG! These things are addictive. Who would have thought such an unusual combination of seasonings would result in such an awesome appetizer/snack? I can’t wait to make these for a get-together. Easy and delish.
